Graham Heretich aka The Cupcake Bloke was on The Saturday Social with Rachael this morning, he revealed his super easy Valentines Dessert recipe- Chocolate Mousse with Rose & Black Pepper Shortbread:
Chocolate Mousse
Ingredients:
- 200g 70% Dark Chocolate
- 6 egg whites
- 2tbsp Caster Sugar
- Fresh Raspberries / Strawberries, to serve
Method:
- Melt the chocolate in the microwave, stirring every 30 seconds until just melted.
- Whisk the egg whites to soft peaks, add in the sugar and whisk again until the mixture forms stiff peaks.
- Add a big tablespoon of the egg white to the melted chocolate.
- Fold in the remaining egg whites carefully using a spatula
- Spoon into 4 glasses or ramekins and set in the fridge for 2-3 hours.
- Serve with fresh berries & shortbread
Rose & Black Pepper Shortbread
Ingredients
- 125g Butter
- 55g Caster Sugar
- 180g Plain Flour
- 1 Fresh Rose, finely sliced
- Few drops of Rose Water
- Black Pepper
Method
- Heat the oven to 180⁰
- Beat the butter and the sugar together until smooth.
- Stir in the flour, black pepper, rose water & petals to get a smooth paste.
- Turn on to a work surface and gently roll out until the paste is 1cm thick.
- Cut into hearts and place onto a baking tray, and chill in the fridge for 20 minutes.
- Bake in the oven for 15-20 minutes, or until pale golden-brown.
- Cool on a wire rack.
